Easy and quick summer dish.
Cut the tomatoes and onions into large slices. Peel the garlic cloves. Place them all in a large casserole dish.
Pour a generous amount of olive oil (measured by eye).
Season with salt, pepper, and herbs.
Bake in the oven at 200°C for 35-45 minutes.
Transfer the mixture from the casserole to a blender (use a glass blender because of the heat), add fresh basil if desired, and blend!
